Nasi Kahwin (Nasi Minyak)

Ingredients A

Basmati rice (washed)

3 cups

Water

2 1/4 cups

Evaporated milk

3/4 cup

Sultanas

1/4 cup

Screw pine leaves

3 pcs

Lemongrass

2 stalks

Young ginger

1 thumb size

Shallots (thinly sliced)

Garlic (finely chopped)

2 cloves

Ghee

2 tbsp

Vegetable oil

1 1/2 tbsp

Salt

1 tsp

Pinch of yellow food coloring

Cinnamon

Star anise

3 pcs

Cloves

Cardomom

3 pcs


Method

  1. Heat ghee and vegetable oil. Sauté ingredients then add in onion, garlic and fry till fragrant. Add in lemongrass, screw pine leaves and sultanas. Toss in rice and fry for 2 minutes. Add in water, evaporated milk and salt.
  2. Then place on a tray and steam for 15 minutes. Remove and drop the food coloring with tooth pick. Then continue to steam for 5-10 minutes or more.
  3. Once ready, loosen the rice.
