
Cookie Dough
- Plain flour 250 g
- Baking powder ¼ tsp
- Salt 1/8tsp
- Unsalted butter, softened 115 g
- Fine sugar 100 g
- Vanilla essence ¼ tbsp
- Hard candy in various colors, finely crushed 110g
Method
- For cookie dough: Mix flour, baking powder, and salt together in a bowl. Cream butter and sugar until light and fluffy. Then add in eggs and vanilla essence and mix until well combined. Add in flour mixture; combine well to form dough. Keep in the chiller for 20 minutes.
- Preheat oven to 170 degrees. Roll out dough between parchment papers to 8mm thickness. Cut with desired cookie cutters.
- Bake until cookies are pale for 10 minutes, remove from oven and fill cut outs with crushed candy.Bake until cookies until light golden brown and candy is melted, 5 minutes. Let cool on baking sheets on wire racks.
