
Ingredients A
- Basmati rice (washed) 3 cups
- Water2 1/4 cups
- Evaporated milk 3/4 cup
- Sultanas 1/4 cup
- Screw pine leaves 3 pcs
- Lemongrass 2 stalks
- Young ginger 1 thumb size
- Shallots (thinly sliced) 6
- Garlic (finely chopped) 2 cloves
- Ghee 2 tbsp
- Vegetable oil 1 1/2 tbsp
- Salt 1 tsp
- Pinch of yellow food coloring
Ingredients B
- Cinnamon 2 pcs
- Star anise 3 pcs
- Cloves 2 pcs
- Cardomom 3 pcs
Method

- Heat ghee and vegetable oil. Sauté ingredients then add in onion, garlic and fry till fragrant. Add in lemongrass, screw pine leaves and sultanas. Toss in rice and fry for 2 minutes. Add in water, evaporated milk and salt.
- Then place on a tray and steam for 15 minutes. Remove and drop the food coloring with tooth pick. Then continue to steam for 5-10 minutes or more.
- Once ready, loosen the rice.
